I was able to get the support chat window to open using Safari on macOS by clicking the little bubble at the lower right of the page (but not by using the contact us button at the top). This approach didn’t work in Firefox. There’s also a contact us button lower down on the page that returned 404.
One other thing you could try is pairing via the Companion app to see if that behaves differently.
I sometimes use Zwift with a Stages bike and macOS Sonoma and I haven’t experienced the crashing problem you describe.
Are you able to get through and view things by skipping the pairing?
If you are, you could try pairing once in the game… And, if that is the case, it might point to a preferences/cache thing (although you’ve mentioned you’ve deleted that).
Another thing would be to restart your Mac in safe mode, and clear any preferences/cache from there.
The uninstall doesn’t remove everything Zwift by the way, you have to go through and delete some folders manually (don’t ask me which, I can’t remember; I can only remember needing to do it)
