Apple Subscriptions expire and cannot be paid for in other ways
If it’s expired on apple then just renew it on the main Zwift site, which cuts all the problems associated with Apple pay
The Apple subscription should only expire if you have no funds in your iTunes account AND your stored payment method has expired. As the note says, if you update your payment method in iTunes, you should be able to continue to use that method.
Alternatively, just subscribe directly through the Zwift site which is also, I think, a bit cheaper, as there is no sales tax added.
