The log file location changed with launcher version 1.1.16 so you may be looking for your data in the wrong place.
It is not unusual for owners of the Kickr Core 2 to get better stability from Bluetooth than WiFi pairing. It’s also not rare to find that a PC struggles to support all the Bluetooth traffic when using virtual shifting and a lot of stuff paired up. The usual fix for that is to disable the on-board Bluetooth adapter and use a USB dongle such as the TP-Link UB500. I have seen that happen even on brand new gaming PCs.
