Virtual shifting isn’t recognized when I start another ride after finishing the first. This is even after reconnecting all the devices on the startup screen. The “Use virtual shifting” option isn’t even in the settings menu.
I have to exit out of Zwift to get it back again.

Did the networking reset. Virtual shifting still isn’t recognized after starting a new ride. However, if I start another new ride after that, then virtual shifting is seen again.
Yes I’m back in business except for starting a new ride. Test this yourself now as multiple people are now complaining, plus other virtual shifting issues since the last update.
Same issue for me using 1.78.0 on PC, and JetBlack Victory, was doing a few test rides last night, first was fine, connected via BT, shifting worked. Ended ride and chose a hillier route, no shifting. No combination of pairing / unpairing brought it back, it just disappeared as an option for me to use. I had to completely kill Zwift and restart. This will be an issue on race days as, past experience, I tend to use separate rides to warm up and jump to the pens (not hitting the join now button)
Has this been resolved? Same deal for me. Starting new ride after finishing first ride>>virtual shifting becomes unavailable. Workaround is to quit Zwift completeley and restart the app. Annoying.
