Hi all I’m a new zwifter… if I start say 20k ride but stop at 7k will it still record as a ride and upload to Strava or do I need to complete the ride?

Yes, as long as it’s more than 2k.

James, I’d like to let you know that as previously mentioned, as long as the ride is 2.0 km (1.25 mi.) or longer, it’ll be uploaded to Zwift, and if Strava’s connected to your account, will be there too.
