I used to be able to select Scotland on the country list and I had a saltire next to my name. Where’s it gone? Am I blind?
As a side note - why is the list not in alphabetical order? And some are misspelled like: “Viet Nam”

If you have the Companion app, the country list is in alphabetical order and Scotland is there. I’ve just looked in the list on the MyZwift page and indeed it seems like the alphabetical order is slightly messed up and Scotland is missing.
As for Vietnam/Viet Nam, that could well come from the way it’s written in the original language (two separate words). The official UN country list also carries it in the two-word form: Member States | United Nations
It looks like there are two different look-up tables for countries.
For https://www.zwift.com/eu-fr/settings/profile, for example, Scotland has disappeared.
In both the Zwift game and in Companion, the list is different. There, Scotland and therefore the Scottish Saltire can be selected.
I’m guessing that the former look-up table may have been altered through some error. Anyone who previously set their profile using that source, will probably no longer have the Scottish Saltire in their profile, either. Not cool.
