This is an on going with a variety of heart rate monitors I have tried.
I connect through my PC to Zwift, the ANT+ heart rate monitor is blue and saying that it is connected but once I enter the actual game, the heart rate shows no reading.
Upwards of 5 minutes later, the heart rate finally appears on the screen. This is useless as it lowers my average heart rate and I haveno idea how I am performing.
Any ideas?

My guess is that since it is winter your skin is dry and that is causing the issue.
Have you tried different brands of HRMs or were they all one brand? I know I had issues in the past with the Wahoo Tickr where it would lose signal randomly throughout my activity and/or drop to a zone 1/2 HR when I was in zone 3/4. I switched to the Garmin Dual HRM. I connect through Bluetooth via AppleTV and use the ANT+ to connect to my Garmin Fenix 5 for runs and Garmin Edge 830 for rides.
Thanks for the reply and the link. However it is only by applying moisture in the first place that the monitor is being recognised. As soon as I enter the main zwift area, the signal invariably fails.
