Colin - what you described there is what I experience. On change of grade, around a 10 delay for the grade and resistance to kick in, mean while I feel low resistance and consequently end up with increased cadence.
I run Zwift on Apple TV and Kickr Core v1, play controllers and HRM all hooked up to Zwift companion. Zwift and Zwift companion are hooked up to same wifi network. I have put it down to lag caused by Zwift not directly controlling the turbo and having to go across the network.
@Colin_McAndrew1 could you please direct message me (I’ll start a DM with you now) the serial number of your KICKR Core V1? I’ll send it to Wahoo Support as well so they can take a look at the data coming from your trainer as well.
I have same kind of issue but with a high resistance as before. I ride with trainer difficulty on 30% and normally I put out around 200 watt in gear 15 with 85 rpm now it is around 280 (or even more) and it’s hard to go to 85 rpm.
I had this issue a few months ago and receive a replacement kickr core from wahoo support, that solved the problem but now after a few months the issue is back. So it seems that it is not directly related to the device itself

Yesterday I did an ERG mode warmup which is always fine, after that I joined a race and the resistance was undoable in gear 15 so I quit the race also the free ride afterwards (also did a spindown between two free rides) was the same behaviour
Today I was testing it again, at the start of the free ride the same hard resistance (gear 15, 85 rpm 300+ watts) but without doing something just after a minute of riding it “clicked” and resistance fell away and returned to the normal resistance I have on that gear. So I’m not sure what it is causing it
Do you see anything interesting if you upload a log file to trainerdx.com? That would show if there are problems communicating with any of the paired devices.
As far as I can see, with the latest log file, there are no bluetooth disconnects, resets or resends. I will check again if the issue is there again on a longer ride.
I also saw that the log file of yesterday was still there but also that one didn’t show any bluetooth problems
