Would be great if more specific Flags could be created. Example United Kingdom 
is made from 4 other national flags Scottish Saltire , George cross , etc. I’m sure other flag options would be easy to create and offer?

There are other requests just like yours, make sure you vote those up so Zwift knows what the users want.
Where do you draw the line on flags? Does each state within the US get a flag? What about Germany and other countries. Seems like it could open a can of worms.
I’d rather see the city added to the profile so you’d know a little more specifically where a rider is from.
