Currently paying for Zwift through Apple app store, how I can I shift away from that and pay Zwift directly without losing my level status, badges, etc?

You can safely cancel and then change to another payment type. Cancelling doesn’t remove your account or progress. There is a separate process for deleting an account, which you must never do
