I was wondering if it is possible to go back and do the ZA 2021 or 2022 workouts and unlock the ZA Jersey/bike color kit ?

No i doubt it. usually those events are one time only type unlock
Unlikely, the people who got these super-exclusive top special kits and helmets would be very annoyed if others got it outside of that time. 
Maybe they should offer one for the 2016 Academy. 30 workouts and some were pretty hard.
My hubby didn’t have a chance to do that ZA and get the kit but wants to go in the workouts and do that older ZA. He was hoping to earn the kit after finishing the 2021 ZA. That’s a real major Bummer.
