every time I connect my speed sensor to zwift it asks me to choose my wheel size which is in my case 29 inch. But when I scroll through the options the biggest size is 27x2.5 inch.

Zwift doesn’t list “29-inch” wheels because we use the European Tire and Rim Technical Organization (ETRTO) standards.
You’ll pick the closest width in the 700×… list (for example, 700×32 C or 700×35 C.
