The running app adjust speed request based on the user strength and performance. During the run if a user lower the speed the training for the day adjust for the new speed

Lowering Speed
Given: during a training plan exercise Zwift app announces to increase the speed to 68. User can only increase until 63
When: zwift app see the user max speed is 63 for more than 1 min
Then: zwift app updates the current training plan for the day to a max speed 63
Increasing Speed
Given: during a training plan exercise Zwift app announces to increase the speed to 68. User increases to 70
When: zwift app see the user speed is 70 for more than 1 min
Then: zwift app updates the current training plan for the day to a max speed 70
If you use the Zwift Companion app then during a workout you can adjust the bias so you can fine tune the instruction to how you’re feeling during the run, up to 110%.
It’s not perfect but probably the closest you’ll get to your request. Eventually it will tweak the workouts a little once it recognises your pace over time.

If you bring up the menu bar on the main Zwift app during a workout there should be arrows that point up and down that achieve the same thing. I just use the Companion app as I find it easier to grab the phone rather than pawing at a tablet while running.
