I like the virtual shifting, but could we please pick our own gear ratio? Maybe virtual shimano, sram or campy cassettes. Select a cassette like I would select a wheel set or frame.

The controllers that come with the Zwift Ride have this ability. You can read more about it on the Support Hub.
These controllers are not the same as the standalone Zwift Play controllers incidentally. The Ride controllers have two shift paddles on each unit where the Play controllers have one shift paddle per unit.
