I recently completed a Zwift TT race and had an average 242W for 21:01mins.
This is marginally higher than my listed FTP in Zwift.
Shouldn’t that mean my FTP is automatically updated?

Not necessarily.
FTP is calculated as being 95% of your best 20’ avg power.
