For what? Specific climbs? Events? Something else?
They do have both of those things for the climb portals, where the primary focus of the ride is the climb.
For all routes, whether free riding, club rides, etc. Seems like a simple thing given that the route mileage counts down for you.
What would happen when the rider reaches the end of the route, and starts a new lap? Or deviates from the route?
When you end a route and start another lap, it would function just as the distance countdown works, i.e. reset to the starting value.
I am a pretty boring user and generally follow set routes, so I have no answer for you. Today’s an off day, but tomorrow I will try turning off a route and see what happens to the distance countdown.

Maybe I am alone on this idea, that’s OK, I think that knowing I only have XX ft/m of climbing left in a ride could be a morale boost sometimes. And, yes I know It could also be a soul-crushing-cut-your-heart-out-kick-to-your-head if you looked and realized that you still have X,XXX ft/m left. If anyone from Zwift actually reads these threads, then they can decide if the suggestion has merit or if it belongs on the dung heap.
In the interim, since you said you normally pick a route and ride it: next time you select a route, look at how much climbing is indicated for that route. Then just follow along with how much climbing you’ve already done (which is already on the screen) so that you know when you’re getting close.
