Now, why is there an ability to find a speed sensor? I mean, speed is determined by Zwift based on power. Seems like a speed sensor would just cause confusion. Am I missing something here?

Check out this thread I started a while ago, seems like they will have a solution in mind graphically with the UI to help on the confusion part.
But the main reason is that you need a speed sensor to help derive the power from trainers or bikes that do not have a power meter. Using speed and the power curve on a dumb trainer can help give a virtual power reading. IE - trainer xyz fluid style at 200w you are at 18mph and with 300w at 25mph etc…
