Reduce resistance after workout ends

Currently doing the 6W FTP Builder workouts.

2 questions:

After a workout ends (and my legs are really tired), the resistance is kept at the level is was during the last lap/split. Fx. 120 Watt “Cool Down”. Is there a way to have Zwift drop the resistance to 0W without having to close and restart the application (reset the trainer)? It would be nice to be able to ride an additional few minutes without any resistance to completely cool down.

Is it possible to adjust the FTP level (base resistance) when using ERG mode - durign workouts? Sometimes I get started with FTP set to low/hign, and I have to restart the workout from scratch to ride with new FTP.
