need change courses, but keep, and add to, current miles

Sometimes there’s a need to change courses (for example you’re warming down and hit Box Hill, or you enter a segment of a course you’re not ready for (like 13% grade for 20 or 30 minutes) so I would like to be able to get off a long climb and just spin for awhile to accumulate miles and warm down properly, or to just save my knees. Please allow us to change courses WITHOUT losing our accumulated miles and time statistics for that ride please. Thanks!
