Good morning, m’y wife an i boough a zwift bike and today we figure out than we cannot change the gender in profil anymore

It’s a bug?

Do we need 2 account one for each?

Even after bying a set 1300euros?

Yes you need one account per person. If you want to switch the gender again, email support@zwift.com and ask them to do it.
