I just purchased the Elite Cog and will soon be installing it on my Elite Suito-T. I’ve read that the Zwift Click only works via Bluetooth, but my entire setup — including my heart rate monitor — uses an ANT+ dongle. Should I change my setup?
My heart rate monitor supports both Bluetooth and ANT+, and I’m using a Windows laptop.

It’s true, you must use Bluetooth. ANT+ doesn’t support virtual shifting so it won’t work.
If your laptop Bluetooth doesn’t perform well, use a Bluetooth dongle on an extension cable. You may as well try it but sometimes that’s the best solution.
What would be the solution to still be able to use my HR in zwift?
You can still use ANT+…just use the BT for the shifting.

You said your HR monitor supports Bluetooth. Pull out the ANT+ dongle and pair everything via Bluetooth and see how well it works. Do some test rides to see if it’s stable. If all your devices support Bluetooth and the connectivity is solid, you have no need for ANT+.
Another thing you can consider is bridging the HR monitor via the Suito. That trainer supports HR bridging so in that scenario the HRM is paired to the trainer and then you pair the trainer to Zwift via Bluetooth and it sends the HR signal that way.

If the laptop Bluetooth adapter does not perform well (this is not a rare problem) then you could disable it and use a USB Bluetooth dongle on a 2m extension cable instead.

Thanks! Didn’t know about this feature on the trainer 
I tried the BT bridge on the Suito and it looked like it bricked the trainer. Took a couple of weeks of testing and sending logs to Elite, installing new firmware they sent before I fixed it twiddling some settings. It would show power on the Elite training app but platforms like Zwift wouldn’t pick up any power. Thinking it might be dead I got a Kickr v5 on the WiggleWindDown and sold the Suito once it was working again.
Elite support was great at trying to help, but it is a protracted affair with a slight time difference and then having available time to go test, given a working day etc.
Given your experience and new firmware update. What would recommend?
For reference: laptop on windows, ant+ dongle and polar verity sense 
Like Chris said above, continue using ANT for the trainer and HRM, and then use the pc Bluetooth connection (onboard or via an external BT dongle) for the Click.
The trainer must be paired via Bluetooth for virtual shifting to work.
