You can request whatever you think would be useful, but you’ll need to be more specific about the things you want. They have recently added a variety of new HUD features that include power numbers, and also splits. Based on what you see in the document linked below, what do you think is missing?
Current watts are displayed on the HUD, and lap time and average power are in the splits data.

I would like the display that is used during training on companion, always on the zwift hud, races, training laps, etc. Where can I request it?

You can contact support if you like. But your comment here will probably be seen by Zwift. Most feature requests like this do not get implemented but maybe if you are very lucky they will do it.

You know about the power graph at the bottom of the screen right?
The graph doesn’t tell you how close you are getting to the next zone up or down. I see that as the heart of this request. If the graph had zone boundaries marked on an axis that could do it.
There have been a few projects listed here using an ESP-32 board.
A little bit of programming and you could make your own.
There is thread that started with KICKR BIKE gear display before Zwift incorporated that. That thread also started to showcase people having the display also show power and cadence. The power would change color based on zones, and one also did a bar graph. With some tweaking, I’m sure it could be changed to a dial like you showed.
