Zwift dropped support for their Apple Watch integration years ago, so unless they revisit that, the recommended solution is do not use the Apple Watch. Buy a heart rate monitor instead. Some people have success using the Heartcast app on the watch so you could try that and see how it goes.

If it dropped support why does it still allows it to be used? Is this a Whitings like thing that never worked but is still there? Also App Store shows it works on Apple Watch.
